Don’t skip the purging step.  It really helps make them taste better.  All the extra water that eggplants hide inside will make this all very watery and the taste will be weak. read more »

Lemon Pound Cake

A few years ago I took a cooking class at L’Academie De Cuisine.  Since this was a very basic recreational class I didn’t get that much out of it, but I did get a few good recipes.  This is one of them.  I love pound cake.  It’s probably one of my favorite desserts.  Other than coconut custard pie and cheesecake.  Then there’s Creme Caramel and cream puffs and ok have to stop!

I think Entenmann’s makes one of the best butter pound cakes commercially, but it is incredibly bad for you.  This version is pretty good and a little better for you.  You can make these in 3 small loaf pans as well instead of one 9×5.  Easier to give out as gifts.  If you’re going to make lots of pound cake get your hands on a stand mixer.  It’d be too tiring otherwise.  You can also choose to use vanilla instead or in addition to the lemon extract.  Try other flavors as you like. read more »

Hard at work

Why does it seem just as I finish one thing something else will come in?  I’m done with school, but the last four weeks I’ve been averaging at least 50 hours.  Yeah yeah I know there are a lot of people working more than me, but it is amazing to me that I will always find something to fill the time.  Exercise still hasn’t picked up and I don’t seem to be getting any free time.

I think the most challenging thing at work is trying to work with people who are much more senior and getting your voice heard.  I think my team has felt like we are not quite as well respected as the others.  I feel like we are starting to get to the point where the purely nice approach isn’t going to keep working.

Last little update.  Here’s the list of stuff to do around the house.  Anyone want to come by and help?

  • Fix the sliding closet doors in the third bedroom
  • Fix the cabinet door in the second bath
  • create an access panel in the master bath
  • Replace the dishwasher
  • Re-tile the master bath
  • Landscape fencing in the front yard
  • Replace the flooring, toilet, vanity in the basement bath
  • Put up new pantry doors
  • Put up some type of door closure in the master bedroom leading to the wash room
  • Replace the kitchen???
  • Crown Molding in the master bedroom
  • Recaulk all the windows and doors
  • Add an R-19 layer of insulation in the ceiling.

Per Se

So I’m sure a lot of you already know that my parents took us out to Per Se in New York for Kevin’s birthday (Dec 24).  I put up some pictures that we took there.  Sorry the quality isn’t that hot, but I have the hardest time working with those little automated cameras.  I should have just brought my behemouth 10D, but the atmostphere of the restaurant seems to preclude that.  I don’t have time right now to give a thorough review, but overall it was a great experience, but the check was way too much.  They gave us printouts of the menu and wines that we had (although they left out the “VIP” items they threw in … more on that later) and I’ll scan those in and post them once I get a chance. read more »
